  • Cut salted mackerel into rags one and a half centimeters thick. Pour the pieces of fish with rice vinegar and leave for a quarter of an hour.
  • Put cling film on a cutting board, put fish on top, and then rice. It is important that the rice layer is uniform. Put the plastic wrap, and press down on top with something heavy.
